Is it too late to rent points AKL in May 2016? Or other resorts? What should I expect to find available for mid May 14-21ish?

In other words: You can try, but don't bet any farms on being able to do it save as a split stay with Saratoga.

The benefit is that now anyone can book for your time frame. Just took a quick look at the availability tool and there is availability at Kidani -- there is also some at SSR. This could always change. I'm not sure what kind of room you are looking for but 1BR tend to be easier to find at this point.

In December, I started piecing together a 10-day May reservation at OKW. Last week, my waitlist request came through and our reservation is now continuous. We were successful less than 4 months out, but our search was at a larger resort with greater inventory.

It will be difficult to get full vacation there, but split stay may be possible. When renting it can be a much harder task to piece a reservation together.
