We just got back from Disney, we were scheduled to stay at the cabins, and were moved to Saratoga Springs because we had too many people. My sister in law brought her step kids. It was okay. Saratoga is awesome. We decided to go back to Ft. Wilderness for the week of New Year's. Do you think there would be any availability at the campsites? Do they get cancellations for those dates often?

Go online and check or call CRO. Cancellations are always happening.
 
Yes, it is too late to call and get a reservation on your first try, but persistence is key. Try to call every day and see if there has been a cancellation. For Labor Day I called every day like a crazy person until I got in. Also, your best chance of getting a cancellation may be very close to to your desired check in date, which for some people is not enough time to plan the trip. It just depends on your particular travel plans. Good luck!!
