Is a 12:10 return flight cutting it to close?

not at all. If you're worried, you can always do the 7:30 walk-off with the luggage option.

I would do express walk-off if you want to be sure you'll make that flight.
We had a 1:30 pm flight in 2015 after our fantasy cruise and I was worried we would be bored at mco waiting.
We had the late breakfast (8:15 am) and at 9 am we were in line to get off the ship. This line extended past the shops if you are familiar with the Fantasy.
We got out of the terminal at 10:30!
We were at mco close to noon and I was freaking out because that airport can have long security.
Luckily that day it wasn't too bad, but once after wdw trip it took us over 80 min to go through security.
I think you are fine with the 12:10 flight but if you get off the ship early.

We did the early walk off with our luggage. The line at customs was super short. A car picked us up at 8 and had us to the airport by 9. We ended up with plenty of time before our flight at noon. Definitely do the early exit off the boat.

What is express walk-off?
Instead of leaving your luggage outside your stateroom by 10 pm on the last night of your cruise and then collecting it in the terminal the next morning, you walk with your bags (you take them off yourself) as early as 7:30 am.
You can go have breakfast at Cabanas from 6:30-8:30 I believe instead of going to the dining room.
We did this our last cruise in October.
We got in line we 8 am and we were off the ship and through customs 30 min later.

no, express walk-off is not for the DCL transportation. That said, on my last cruise (a few weeks ago) we were told to be off by 8:30am if we were on DCL transportation because the buses were leaving at 9am. It takes roughly 1 hour to get to the airport, so I'm pretty sure you will be just fine for 12:30 flight.

I believe so but we didn't use it so I can't confirm for sure. Maybe someone else can speak from experience.
Edit - just read you can't do it..unless you board the bus by 9.
That should be fine, we were off the ship by 8:30 doing express walk-off.
But you can get off even sooner then that.

A couple of weeks ago, we did the express walk-off and were in our Happy Limo car by 730 and at the airport a short time later. By the time we arrived at the airport, our airline counter was not even open. When it finally opened about 45 minutes later, we whipped through check-in and security then waited for hours for our 11:35 a.m. flight. We will chose this flight home in the future.

Yes, you can do express walk off and take DCL transportation.

There are so many porters that can quickly get your bags, we never do the express. Even once we got off at 7:30, grabbed a porter, he hailed a cab to rental car and we made it Universal Parking lot by 9:10am. We have a 12:10 flight next month too. I also have heard buses will leave when they are full, so we plan on being off 8:15-8:30am We do have to check bags with Southwest.
