Is 2 hours enough time?

To go from ASMo to MK, take the boat to Poly and mobile order Capt. Cook's on the way, eat, and then take the boat back to MK?

Going to the Merriest After Hours and would like to get there at 7pm so thought I'd leave ASMo at 5pm but is that enough time?

Its just 2 adults.

You might be ok, but I'd give yourself a little more time just in case. The bus could be very late, CC could be very crowded, etc. If you have extra time you can grab a drink somewhere at the Poly while you wait to head over to MK.

Maybe leave your room at ASM at 4?

I agree with leaving earlier rather than cutting it close. Waiting time for the bus and boat can be an issue. If you finish dinner at CC early, you can always walk around the Poly, ride the monorail around the loop a time or two, visit GF or CR, or otherwise spend time until 7:00.
