Just either get all of the photos you want into a new folder or, if you want to synch ALL of the photos you have in your My Pictures folder, use it. Once the iPod is connected and iTunes is open, click on the name of the iPod in the source list on the left side of the window. You'll see the window open with the picture of the iPod and a whole boatload of tabs across the top. If I'm not mistaken, one of them should say "Photos." (I'm at work and don't have iTunes here to verify for sure). In that tab, you can dictate with which folder you want to synch the iPod. Select it, click "Apply" (again, if I'm not mistaken) and synch. Then you should be good to go.
I mentioned separating the photos into a new folder because of space limitations on the iPod, so if that's not a concern for you, you can just link it to your "My Pictures" folder. Otherwise, using the new folder allows you to just synch only the best ones.
