I think there were some 'buy an ipod get a Target gc' deals around Xmas but I haven't seen anything else.
In general, Apple products basically don't ever discount or go on sale beyond about 7-10% off (through Apple OR through other retailers), which you can find on occasion or if your employer does an Apple discount.
Have you looked at Apple's refurbished ipods?
On Apple's own site, in the store, scroll down on the side and there are refurbished ipod, ipad, mac links to click. Their refurbished products are all guaranteed, year warranty, new outer casing and battery. They're not HUGELY discounted, but they're cheaper than new.
