At the Studios it is 50s Prime Time is the most interactive, you may have to stand in a corner or sing "I'm a Little Teapot."
Biergarten at the German pavilion at EPCOT, while I haven't been there, I understand it is somewhat interactive.
Whispering Canyon at the Wilderness Lodge resort also is mildly interactive, mostly the kids on hobby horses, but adults are supposed to swirl their napkins and cheer them on. The entire restaurant does it, so you are not singled out.
The Luau and Hoop De Doo Revue dinner shows select a limited number of people from the audience.
There are also character meals, but I really wouldn't consider them interactive, generally costumed characters come and visit you at your table for autographs and photo ops.
