Inspired by Pie Filling Thread: Recipes For Using Neufchatel Cheese

My DH picked up some Neufchatel Cheese (similar to Cream cheese), when they were BOGO. I want to use it before it goes bad, & have read that it won't freeze well. The exp. date says Sept 23rd. I've never kept cream cheese in my fridge that long. Will it really be fine for that long? Anyway, does anyone have any easy recipes I can use this in? The recipes I have with lots of ingredients kind of defeats the purpose of getting the cheese BOGO. I have 4 packs to use. TIA

A family favorite........

2 packages Neufchatel Cheese
1 can No Bean Hormel Chili
1 cup shredded cheddar cheese

Spread softened Neufchatel Cheese in pie plate. Sread chili on top of cheese and sprinkle with shredded cheddar cheese. Heat in oven or microwave until cheddar cheese melts and bubbles on the edges. Serve with tortilla chips or scoops.
