What about going West? It's a bit more work to plan vs a cruise, but we took 6 kids ranging in age from 5 to 13 out to Yellowstone in 2008 and they LOVED it.
We stayed in 3 different lodges/cabins over 7 nights and saw an enormous amount of wildlife (on the first afternoon, we saw a bear, a coyote - eating his wild lunch, bison, and elk). We went river rafting, horseback riding, got up early to watch the wolves
and their pups, picnic'd with marmots, saw Old Faithful and bubbling mud pots, etc. etc.
We had 3 girls and 3 boys and they all thought it was wonderful and they ask about going back. PM me if you want info re: where we stayed.

ETA: I would think you could do this for about $3k. There were 14 of us and we spent about $7k
total. Now, we are not fancy hotel folks, stay at Values or Mods at Disney, so you could certainly spend more than $3k to stay at some of the nicer lodges/hotels around Yellowstone, but it could also be done for around $3k.

). Even the cruise staff was commenting that they hadn't been through seas that rough for a LONG time. I did get seasick, but I purchased Sea Bands while on St. Thomas and had no further issues.
It was reasonably priced too.
