inexpensive "finger-foods" buffet luncheon

It's my turn to host our committee for a casual buffet type luncheon.

There will be about 10 of us, and the idea is to serve some type of finger-foods that don't require sitting at a table.

Most people serve sandwiches and chips, some have done appetizer type finger-foods.

IOW we grab some food, and sit in the family room for our meeting.

I'd like to find something else, and thought ya'll would have some great ideas.

Of course silverware will be available :) but it has to be something simple and easy that can be eaten from your lap or coffee table.

You get the idea I'm sure.

Ideas?

Sam's Club (and other places, I'm sure) have little mini quiches that are great finger foods for parties.
 

Do you have a Trader Joe's near you? They have great little frozen things that I always grab for parties.

Another party option I make are BBQ cups. Simply cook ground beef and add in BBQ sauce. Take a can of flaky rolls and press them flat. Form them into a muffin tin to make a little "cup." Fill with the beef, sprinkle on some cheese and cook using the roll temp/time. They are really yummy and can be eaten without utensils.

If you have an Aldi's look at their appetizer section. They have some fancy stuff for $2.50 a box. I got a bunch for New Years and people raved about them. If they only knew!
 
I took a little box of the jiffy corn muffin mix, cooked them in my mini muffin pan and made little "cups". I cooked 1 or 2 chicken breasts, chopped up with bbq sauce and filled the cups. Stuck them in the oven really low to keep warm... got lots of rave reviews! That was cheap!

I hadn't heard of the combo before. I always have used grape jelly and chili sauce.

I have used red currant jelly and Dijon mustard with little smokies and chile sauce and grape jelly with meatballs.
 
I would make a crockpot full of Meatballs (you can buy them frozen at Walmart or Sams) and dump in a jar of Terriyaki sauce. I don't know about using grape jam and mustard. That doesn't even sound good to me, but different strokes.

If you have 2 crockpots you can fill up the second one with Lil Smokies and BBQ sauce.

You could also make Rotel Cheese dip and CHips.

You can buy big cold cut trays or Cheese trays at Sams also. Big ones. For cheap. Cheap compared to getting them somewhere like Kroger.

To me the risk in making sandwiches is not everybody likes Mayo on their sandwiches but then again some ppl think a dry sandwich with no Mayo is gross. SO you can't please everybody with sandwiches.

Your guests will be so impressed and it is so fun and easy. Everything is disposable or you can wash and reuse for your next get together.
They have a cookbook at Bed bath & beyond too called "Just Tastes" but I use the disposible plastic plates, cups and silverware, all in miniature! I do this for all holiday parties but 10 people would be so easy and cute!

We buy Hawaiin rolls (they come in packs of 12) and cut them horizontally, fill them with some kind of lunch meat, (turkey and/or roast beef and/or ham) and put cheese on them. Then, they cut neatly into a dozen.
 
Definitely some raw carrots, red and yellow peppers, broccoli florets, grape tomatoes, sugar snap pea pods, baby asparagus, and cucumber slices and dip. :thumbsup2


You can be fancy and call them Crudite'... ;) and serve the dip in a hollowed out green pepper.

google images has tons of artsy ideas for serving crudite' in both fancy and simple ways.

And the same can be done with fresh fruit and a sweet dip.

what a great idea - that would be easy for lunch to take for work too, if there were leftovers.
 
Here are a few I use, for appetizer parties.

I love to use king Hawaiian rolls or they now have little sub rolls. I make pulled pork in the crock pot a few days ahead then turn on low and heat throughly, add to roll, add a bit of cole slaw, really good, meaty,sweet and crunchy.:thumbsup2

Homemade chicken salad, lettuce, tomato, and some thin slices of red onion, on a Hawaiian roll.

Or

Taco night soft or hard shells, beef and chicken, and the fix'ins, you could add yellow rice and black beans for a side dish, or buy larger wraps and add all together.

Or

Lettuce cups - filled with stir fry, - shrimp, chicken or beef fried rice or a combo, whatever veggies you like, some dipping sauce and your good to go. This can be made ahead of time, so it is a time saver, just keep the meat and veggie seperate and heat and combine right before stuffing the lettuce cup.

For desset, Brownie or cake bites - just use my mini cupcake pan for these.
