I would listen very sympathetically to everything your mother has to say, respond with neutral but kind comments like, "that's really hard," and then I'd stick to my guns and say, "I promised Susie that we would go to WDW, and I need to keep that promise." More or continued objections would be met with the same sympathetic noises and sticking to guns. Hopefully, she would give up after one or two cycles, but if not, on the third I would say, "I promised Susie that we would go to WDW, and I need to keep that promise. I know we would both be disappointed if we couldn't spend most of our trip with you. I hope you still want us to spend the rest of the time with you at your house?"
My parents and parents in law are just wonderful, but I do have an older relative who is a very much like this, so I know how hard it can be. Good luck!
