I'm torn, what would you do?

I'm torn on what to do with my DHS & Epcot strategies and ADR's.

We have 3 kids (8,6,4) and have to do bfast or lunch at H&V for DD4, bfast at Sci-Fi for DS 8, JTA for 8 & 6 yo and, of course, Fantasmic. Originally we were going to do the Fantasmic dining so we didn't have to wait but that was before the SW meals were announced. There's no way we can do all three restaurants in one day. I was going to drop Fantasmic dining and do Sci Fi bfast and H&V lunch but I don't have my "perfect" time for the Sci Fi bfast. We have two choices:

1 - 8:25 ADR at H&V, 4:30 Fantasmic dining, do JTA and tour DHS, Fantasmic. Then the next day go back to DHS for a 9:10 Sci Fi bfast and park hop to Epcot for the remainder of the day (probably arrive around 11am).

2 - RD at DHS, sign up for JTA, do TSMM, etc until 9:45 Sci fi bfast; 2:40 H&V lunch, drop fantasmic dining and just wait in line . Then the next day, just do Epcot - we will not RD at Epcot but should arrive at park opening.

Both have their pros and cons, option 1 seems a little "clumsy" - I don't want to feel rushed at H&V so we can run and sign up for JTA and hit TSMM but having Fantasmic dining passes will be nice... plus doing Sci Fi the next day may back fire if our meal takes too long, getting to Epcot takes longer, etc. But with option 2 I feel like the 9:45 time is right in the middle of everything and if we have to be there early for RD then we might as well be eating a meal I'm still searching for better times but we leave on 5/2 and I want to secure my FP's!

With #1 - from H&V, send one adult with the two kids to sign up for JTA and then they can return to H&V to finish their breakfast and take part in the entertainment. Use a Fp for TSMM and you won't have to worry about a shortened breakfast. With 3 kids, having the Dining Seating for Fantasmic works out great because you'll have a shorter wait and premium seating in the amphitheater.
