What on earth do you all who are on low carb diets eat for breakfast?? I feel like I have eggs coming out of my ears!:eek:
 
Mmmm I love eggs with bacon, that is my favorite breakfast, but before I have had a hamburger with cheese!! LOL...That was good too! I have also had Ham and cheese rollups with mayonaise! Whatever I have ate for lunch, I sometimes eat for breakfast the next day! :)
 
Sausage scrambled into the eggs..with cheese..yummy..or bacon like Beanie said.

See if you can find Taylor Ham...I think it is a Pork Roll...and OMG..it is the best when you fry it...but it is major fattening..so don't eat it every day.!!! lol

1 slice (1/12 of the pan) of Beachgirls low carb cheese cake. I make one on the weekend... and have a slice a day Monday - Saturday. On Sunday I have eggs and bacon and sliced fresh strawberries. :)

I eat very WELL. :teeth:

Breakfast does not need to be "traditional breakfast foods". Left overs from the previous evenings meal are just fine. A big salad with meat and cheese, and dressing is a GREAT breakfast! Think out side of the box!

Other ideas - a scoop of chicken salad (make a tub of chicken salad using diced chicken, mayo, celery, onion, and if off of induction you can add some chopped walnuts too!). A scoop makes a great breakfast, a scoop on a bed of lettuce is a great lunch! Same with Tunasalad (same composition just substitute tuna and possibly some diced dill pickles).
 
I sometimes have leftovers...most of the time I have nothing. I have never been an early eater, makes me feel yucky.
 
If I'm not hungry that early in the morning, I'll just mix myself up a protein shake (my favorite is Optimum Nutrition Whey Protein - the French Vanilla flavor). Sometimes I add blend it up with ice and 1/2 tsp. instant coffee, and 1 tsp. Splenda to make a Frappucino! Yum!

Then, later in the morning when I start getting hungry, I'll have a couple slices of cheese and a beef stick - that will hold me over til lunchtime!

I make some Dobie muffins! Here's a link to her recipe - they're great! You can use whatever extract flavor you want, and you can also double the recipe and make it in a loaf pan! I can't seem to get the URL to work right - so I'll just copy the link:

I absolutely have to eat breakfast, I get nauseous if I don't. Thanks everyone for the great ideas. You're right, I have to think out of the box. I don't know why I was thinking I could only eat traditional breakfast foods. Gotta run, I'm at work and not suppose to be on here. See ya all tonight.:D
 
I usually have an Atkins shake for breakfast. I'm not a big breakfast eater but I have to eat something when I take my vitamins or I'll get nauseous.

Personally I perfer to have eggs for my evening meal. I love to have a big omelet for dinner with a couple pieces of Atkins bread toasted. I can't eat the Atkins bread every day or I'll stall but once in a while it's fine.

Cream of "Wheat"

1/2 c part skim Ricotta
3 tablespoons whipping cream
1 egg
1 tsp vanilla extract
1 packet Splenda
1/2 tsp cinnamon

Combine all ingredients in a small pan. Mix well. Stir over medium heat just until boiling. Reduce heat and stir until desired thickness. Serve warm.

HOT

2 Tbl flax seeds, measure then grind
1 tsp cinnamon
dash of Nu-Salt
1/2 tsp Stevia (you can use a teaspoon or two of Splenda instead)
5 walnut halves, chopped
5-6 Tbl hot water
Just mix all the dry ingredients together, then add the hot water & mix like crazy.

COLD

Piekinns' Flax Seed Granola
from Piekinns (!)

1 lb ground flax seeds
1 cup shredded coconut
1 cup thin sliced almonds
1 Tbl pumpkin pie spice
1/2 cup splenda
1 Tbl vanilla
6 egg whites
1/2 cup water

Mix dry stuff and wet stuff in separate bowls, then mix together.
Spread it in a jelly roll pan and bake untill compleatly dry at 250* for about 3 hrs.
Every hour while baking, take a fork and break up any large bits.
Cool completely before it is stored.

Breakfast "Pudding"

1/3 cup ricotta cheese
3 Tbs. heavy cream
1 egg
2-3 Tbs. flax meal (ground flax seeds)
sugar-free maple syrup, Davinici/Torani, or Splenda
cinnamon

Combine ricotta, cream and egg in microwave-safe bowl and mix well. Microwave for 2 minutes, stirring every 30 seconds. Mixture should thicken to cream of wheat consistency. (You can also do it on the stove, stirring constantly until mix thickens, but it makes a messy pan!)

Add flax meal, sweetner of choice (Log Cabin sugar-free syrup is WONDERFUL), and a sprinkle of cinnamon, and stir well. Eat while warm.

This is good on cold mornings... just like a bowl of oatmeal! Add a little cocoa and chocolate extract, and it makes for a good warm dessert, too.

Hot Flax Cereal

for 1 serving:
3T flaxseed meal
3T wheat bran
cinnamon/ splenda/ dash of salt
add 1/2-3/4 c water microwave 1 min stir in a few
chopped nuts
optional: cream and vanilla, maple or other extract

1 carb and loads of health benefits!

Also for granola in a hurry
2 C Flax seed meal
2C wheat bran
1/2 C unsweet coconut
1/2-1 cup chopped nuts
1/2 c spenda (to taste)
dash of salt
1 stick butter melted (I added a little canola oil)
Optional: LoCarb Mapel Pancake Suryp or extract
350 for 20-30 min stir every 10min
cool & store in a tight container.

Low Carb Hot Breakfast Cereal

1/2 cup almond flour
1 teaspoon xanthan gum
3 Tablespoons flax meal
1-1/4 to 1-1/2 cups warm water (depending on how thick you like it)

Heavy Cream
Sweetener

Mix dry ingredients together in a large microwave safe cereal bowl. Gradually add water a little at a time mixing well with a fork.

Cook on high in the microwave for 3 to 4 minutes or until well cooked.

Add cream and sweetener. You can also add flavors like cinnamon and vanilla or whatever you like.

This is a lot like cream of wheat.
