If I am correct, you will have 8 people. If you all get along well and would like to stay in one condo, then go with a 2 bedroom. If you would like to have time with your family alone then get 2 one-BRs or 2 studios or one of each, depending on how many points you have. (I think 2 studios would require the fewest points of all the options.)
If you decide to take a 2 BR, then OKW would be a strong consideration because the condos are so large. I think the crew you describe may feel a little cramped in the other 2BRs. OKW has the lowest point requirement and is famous for peace, quiet, beautiful landscaping.
If your priority is being real close to Epcot, then choose Boardwalk or Beach Club, which are only a short walk away. If you plan to spend a lot of time at the pool, choose Beach Club. (Although the others have nice pools, Beach Club has the best.) If you want to be a boat ride away from Magic Kingdom, choose Wilderness Lodge. If Downtown Disney, choose Saratoga Springs.
Downtown Disney is a WAY underrated sleeper in my opinion. It's the only place my kids ALWAYS want to visit every time we go. Mainly for the
Lego store and the fountain. But also for the Volcano dessert at Rainforest Cafe.

You won't regret whatever you choose.
