Does anyone know approximately what date they begin the Holiday Illuminations with the extra fireworks?

I would imagine when they start the rest of the holiday events at Epcot, which is the day after Thanksgiving.

Does anyone know approximately what date they begin the Holiday Illuminations with the extra fireworks?

It is always Friday, the day after Thanksgiving.
You can tell when, because they move the start-time of IllumiNations from 9:00PM to 9:30PM.
