I enjoyed Untrainable Dragon more. I would say it tugs at the heartstring a little more if you enjoy the HtTYD series. Cirque Arcanus is pretty neat, but it's based on Fantastic Beasts which has less of the original Harry Potter feel. But it you were a big fan of Fantastic Beasts, then I would go with Cirque Arcanus. I think Dragons is a tiny bit shorter and have more showings, so that can also affect which you can squeeze in.
I am more of a Harry Potter fan, and I also enjoyed Untrainable Dragon more. BUT, try to ask a cast member if Toothless will be there... we did a show without him and it is not nearly as good.
I know the Untrainable Dragon show was having lots of problems my day, maybe it's normally better than what I saw? Overall the storyline was just painfully predictable and I didn't think there were real "surprises" in the Dragon show. Cirque Arcanus had more impressive sets/props (IME, other than Toothless), and it had more variety / storyline than the Dragon show.

Personally found the Untrainable Dragon show meh at best. The acoustics in the theatre aren't the best, which made the singing (which is a big part of the show a little hard to hear/follow). Storyline is pretty basic, acting was pretty cheesy, someone else mentioned predictable storyline and thats a great way to describe it. Seeing hiccup fly over the theatre was pretty neat though.
Flipside was I really enjoyed Cirque Arcanus. It was unique/different for a theme park stage show. Theming of the waiting area was cool, and the pre-show was a great setup for the actual show (minus being packed in that area like sardines).
My kids would like Untrainable Dragon show more, I preferred Cirque Arcanus. Couldn't tell you anything about Fantastic Beasts, and didn't expect to like the show, but I enjoyed it. I watch HTTYD a lot with two boys in that age range, and thought I'd love the show, but it didn't hit for me.

You should show up for Cirque Arcanus pretty early since that show has an actual queue and often fill up well before the show. The Dragons one is more of a cattle call. Just show up about 15min early and people just pile in when they open the ropes to the outdoor waiting area.
I've only seen Cirque but it was soooooo good and I haven't even seen any of the Fantasic Beasts movies.
