If you had to choose 3 signature dinners....

The three we are doing in a couple of weeks are:

Narcoossee's
California Grill
Brown Derby

I wanted to change one of these to Shula's but got out voted... :confused3
 

DH can not eat any meat except seafood, he thinks they all have great selections. These are his top 3 signature restaurants.

Narcoosees
Jiko
Artist Point
 
There is a boat from WL that goes to Ft. Wilderness/Contemporary

Picks:
Jiko..wild boar app. got rave reviews from our group as well as the chicken entree.
Artist point....mushroom soup (buffalo not so good according to the others at my table)
Caligrill...go if you haven't been there for the view ever. I don't think the food is all that good there though. The porkloin seems to be the one thing that is decent. I didn't find anything served there to be better than any other Disney restaurant..in fact, my sushi fell apart (like Kona sushi bar much better) and my veggie gnocchi with truffles had very gloppy gnocchi and the truffles were dried out and the veggies were only slightly warm but not cooked at all. But, definitely worth a one time experience of the view and fireworks.
 
In addition to the great recommendations above, consider Artist Point in the WL. It is a lovely restaurant and right where you are staying!

I have had great meals at all of the other locations people have recommended. I agree with the assessment that Narcoossee's has become inconsistent since they changed F&B managers earlier this year.

If you change your mind on going kid-free and still want to do a nice event, see if they'll book you in Citricos Chef's Domaine with 4 adults and 2 children. It's really a great experience and the private room gives you some leeway with the kiddies.

Now, CG and FF are not our favorites, to be honest (Citrico's and Jiko hold those positions). Our experiences there were just ok. But they are good for a group of fish-eaters and vegetarians, they are easiest to access on Disney transport and it sounds like they are new to you.

...staying at WL & mom is staying at FW.

I think that the Boardwalk would be a fun... 3 signature restaurant dinners (on hotel property)...where would you go? ...3 of us eat only seafood, otherwise vegetarian). Thanks:)

From all of our trips these are the three we found to be solid performers which are seafood oriented. CG is probably one of the TS signatures oriented to meeting vegetarian diets, but best to make arrangements ahead of time.

As with all Walt Disney World table service restaurants, it's always a good idea to mention your dietary needs when you make priority seating. A call to the restaurant 72 hours in advance may also provide more options than you see on the menu.
