I agree, it is completely overwhelming. After many trips and lots of dining experiences, we are still overwhelmed planning each trip. Are you looking for good food, or the overall experience? For girls your girls' ages:
Cinderella's Royal Table would be a splurge, but IMO, worth it for little girls. The food is meh, but the experience is priceless! Otherwise, Akershus has the experience of meeting princesses, but at a lower cost (IMO, the atmosphere is not as great, but as you have never been to either, your girls wouldn't notice the difference).
Chef Mickey's along with a ride on the monorail or a boat ride over to WL and back. Some two-year-olds are afraid of the characters, though. Again, food is hit-or-miss. We have had several pretty good experiences and one pretty awful one (food-wise).
Crystal Palace has a gorgeous atmosphere with and Pooh and Friends and has a decent buffet at any meal, again characters in big costumes.
'Ohana has a fun dinner, and at the Poly you can see the EWP (9PM, if they stay up that late) and watch Wishes across the lagoon, or breakfast with Lilo and Stitch plus Mickey and Pluto; it's also on monorail. This is one of my family's personal favorite dinner experiences.
Les Chefs de France in Epcot is one of our favorites, and we think it's a very good value. If you go at the right time, you can see Remy, who is adorable!
