If you could do one restaurant for lunch…

I agree depends on where you are staying since I don't see the point in going to the other side of the property just for a casual lunch. Where are you staying and are you looking for a full meal or just want a salad/sandwich? Disney Springs has lots of places you can easily walk to if staying nearby. All of the Disney hotels have a variety of choices as well.
 
Honestly, I'd hit Disney Springs and do either Earl of Sandwich or D-Luxe Burger. Both are great!

Depending on what time the rest of your party arrives, you could get at snack at Captain Cooks or a Dole Whip at Pineapple Lanai to tide you over, hit the shops or the pool, and then do a late lunch/early dinner (4pm) by ordering the 'Ohana noodles/potstickers/bread pudding at Tambu lounge.
 

I will go with the majority & say either SAANA or Geyser point. Both great options for lunch.
 
We always do Disney Springs for lunch between Boathouse or Raglan Rd. Stop at Gideon's if line is not too long.
Then its shopping till rest of family arrives.
