When we ate at Boma in June I requested the recipe for their Ginger Carrot soup, which they promptly e-mailed to me. Well, I just made my first batch and if I close my eyes I can easily pretend I'm sitting in Boma! The recipe was so easy to follow and is absolutely delicious. We'll be at AKL again in a few days but for that long time in between trips, this is the next best thing!:)

Here's the recipe - I hope you enjoy it as much as we do!

CARROT GINGER SOUP
Disney’s Animal Kingdom Lodge
Boma

Yield: 8 servings

Ingredients:

2 cups Carrots, chunky cut
2 cups Water
1 cup Heavy Cream
1 cup Milk
2 cups American Cheese, sliced or shredded
1 ½ tablespoons Ground Ginger
½ cup Sugar, adjust as needed
Roux (¼ cup butter and ¼ - ½ cups flour)
Method:

To make a roux, melt the butter in a small sauce pot, slowly add the flour to make a paste. Cook until incorporated. Remove from heat and set aside.

In pot cook carrots in water, sugar, and ginger. Let simmer until carrots are soft. Using a food processor or blender, puree until smooth.

Add heavy cream, milk, and roux. Cook until soup is hot and slightly thick.

Add American cheese and let simmer until cheese melts.

Adjust seasoning.

Wow! Sounds interesting. Thanks! I can't remember if I ever had this or not, but I'm going to try it.

PS. Just made 2 reservations for Boma's in November.

I sampled the Bacon and Potato Soup and also some sort of Chicken Soup (tasted spicy and had the texture of Chinese Sweet & Sour soup).

Now, have the Zebra Domes gotten smaller? I remember them being the size of a Hockey Puck, now they are the size of a silver dollar?

Yes, you're right, we noticed that the Zebra Domes have gotten smaller too. Same great taste though! Hope you enjoyed your dinner!:)
 
Mmmmm I liked that soup. My favorite, which I tasted on the cullinary tour but they didn't have the night we dined here, was the mulligatawny.

I want to go back!
 
We just loved Boma, and that Mulligatawny soup - I could have eaten a gallon of it!! Dinner there was definitely our favorite meal of the whole week. I tried one of the African white wines, and it was wonderful. My DS (14) wants to be a chef, and he was just fascinated by the entire experience we had at Boma.
 
The carrot ginger soup was my favorite when I was there in April. Having read the ingredients, I know why!!!!:eek:

Going back to WDW in September, we already have 2 PSs for our week long stay!!! I'll report back.....
