Idea's needed for 21st Party

I want to plan something really good for my fiances birthday. His mum has basically said she will pay for it but cant be bothered to arrange anything.

Does anyone have any good idea's? The only thing we dont really want to do is dog racing as we did that not so long ago!

I want something that his family will all remember as there not ones for making much effort!

Any suggestions you have would be great!
