If you are not looking to spend a lot of money, than doing it through Disney Fairy Tale Weddings might not be what you're looking for. If you checked out the DisneyWeddings website under vow renewals, it would probably have information to help. From my understanding, there are minimum expenditures for vow renewals (and weddigs) at Disney. On weekends and holidays, the minimum expenditure can be as much as $10,000.
Maybe you would like to look into a Wishes or IllumiNation dessert cruise? Possibly inquire if you can have champagne served.
The Grand Floridian bakery does an incredible job with their cakes. By contacting them, they might be able to reproduce a top layer of cake similar to the one you had on your wedding day. Or, maybe yuo had another design in mind.
The Leu Gardens in Orlando are beautiful from everything I have heard here. Perhpas looking there as an alternative. Additionally, people have had nothing but nice things to say about working with JustMarry.com for the Swan and Dolphin weddings. You might find what you're looking for there as far as a ceremony, but not the Disney restrcitions and expenditure.
Book a special dinner for the two of you on your wedding anniversary. I have heard people mention the chef's (please correct me if I am wrong!) table at Victoria and Albert's (GF). Narcossee's (GF), Citricos (GF), California Grill (CR), Yachtsman Steakhouse (YC), Shula's Steakhouse (Swan or Dolphin), Le Cellier (Canada), Chefs de France (France), Alfredo di Roma's (Italy), or Brown Derby (MGM) all come to mind as possibilities You could book for just a romantic evening for two, or bring the whole family.
