I'm looking for some ideas for having lunches and dinners in the room. Since we'll be staying in a family suite, we want to take advantage of the table and "mini kitchen". I want to prepare things we never have at home that the kids beg for when I go shopping. The problem is some of those things need to be frozen (pizza rolls, bagel bites, hot pockets, etc..) and the fridges don't have a freezer. Does anyone have any ideas about preparing special lunches and dinners with only a microwave?

A lot of times on vacation we will hit up the local supermarket....Publix in Orlando and hit the prepared food aisle. They have things like fried chicken, rotisserie chickens, bagged salads, mac and cheese, cole slaw, meatballs, etc.

Some other things you can make are hot dogs, chicken nuggets, rice and noodle bowls, etc.

What we also do is order some "to go" items from a local chain like Olive Garden, etc. You could order two entrees and then round out the meal with a bagged salad and a loaf of fresh bread. Much cheaper than doing a full sit down and sometimes works better if you have little kids who just don't want to sit still in a restaurant at the end of the day.

Most of these can be just heated up in the microwave in your room and you could also buy a small cooler to store them for a couple days.

Hope this helps!

Below are our favorite hotel-rooms w/a small kitchen meals. Most are more suitable when you are driving and can bring a filled cooler with you, but I also admit on to stuffing and checking a suitcase full of items that don't need to be refrigerated. :rolleyes1

Breakfast (we keep it simple):
Bagels and cream cheese

Sugary cereal I don't normally allow w/milk (you can find shelf-stable milk at Dollar Tree that doesn't require refridgation until its opened)

Dried mango

Fruit cups

Nutella and that dried toast-ish stuff you can buy

Lunch/Dinner (I'm a big fan of roasted chicken as a time saver, this will show :rotfl2:):
BBQ Ranch Chicken Salad - cold roasted chicken, lettuce, corn (you can defrost frozen or use canned), black beans (canned, drained), tomato, avocado, French's fried onions for garnish, 4 to 1 mixture of ranch dressing and bbq sauce; add french bread if you need a starch

Chicken Burritos ala Chipolte - roasted chicken, cilantro-lime rice (I make at home, you could use some pre-packaged rices too), drained black beans, cheese, sour cream/guacamole, pico de gallo or salsa; wrap it all up in a warmed tortilla

Pasta and sauce, salad - precook the pasta and stuff it into a plastic bag to bring it with you (nuke slightly to warm), same with meatsauce (or just buy the pre-packaged sauce in the fridge section of the supermarket)

Cold fried Supermarket chicken (or cold roast chicken LOL), potato salad, raw carrots

bagel pizzas, that you make. Grab a bag of bagels, some sauce, cheese, and a meat/veggie

do "subway" night, make your own subs in the room with chips/fruit

loaded oatmeal, breakfast for dinner;) add fruit/nuts. Add it to the the eggs someone else mentioned

Dinner Salads, your bagged salad with meat(chicken already cooked or lunch meat) with the fixing

Walk through the deli in the supermarket and get an idea what is there and what you can have in the fridge to the microwave to eat before you go.

You can do mini bagel pizza (kind of like bagel bites) half a mini bagel, pizza sauce, cheese in the micro. One of quick go to dinners is ham and cheese sliders. I take a package of deli ham, sliced cheese (real cheese not Kraft slices) and put them on slice a package of Hawaiian rolls lengthwise then micro for like a minute and a half. I add baked beans with it and some fruit and it's a quick meal.
