Below are our favorite hotel-rooms w/a small kitchen meals. Most are more suitable when you are driving and can bring a filled cooler with you, but I also admit on to stuffing and checking a suitcase full of items that don't need to be refrigerated.
Breakfast (we keep it simple):
Bagels and cream cheese
Sugary cereal I don't normally allow w/milk (you can find shelf-stable milk at Dollar Tree that doesn't require refridgation until its opened)
Dried mango
Fruit cups
Nutella and that dried toast-ish stuff you can buy
Lunch/Dinner (I'm a big fan of roasted chicken as a time saver, this will show

BBQ Ranch Chicken Salad - cold roasted chicken, lettuce, corn (you can defrost frozen or use canned), black beans (canned, drained), tomato, avocado, French's fried onions for garnish, 4 to 1 mixture of ranch dressing and bbq sauce; add french bread if you need a starch
Chicken Burritos ala Chipolte - roasted chicken, cilantro-lime rice (I make at home, you could use some pre-packaged rices too), drained black beans, cheese, sour cream/guacamole, pico de gallo or salsa; wrap it all up in a warmed tortilla
Pasta and sauce, salad - precook the pasta and stuff it into a plastic bag to bring it with you (nuke slightly to warm), same with meatsauce (or just buy the pre-packaged sauce in the fridge section of the supermarket)
Cold fried Supermarket chicken (or cold roast chicken LOL), potato salad, raw carrots
