My mom used to make an awesome ice cream/cake concoction. Bake a cake in a cheesecake pan not a 9x13" pan. Looks like a cookie sheet but higher sides. Any kind of cake mix works. Then she'd cut it in half placing on half on a platter. Slightly soften a 1/2 gallon of any ice cream and cut it with a knife in "slabs" and place over the cake. Add the remaining piece of cake on top making a log. Place in freezer for a few minutes to help set up. When you are ready to use spread cool whip over the entire cake and slice and serve!
It is so easy and so many combinations. Chocolate, yellow, cherry chip, cakes with rocky road, cookies and cream, vanilla, chocolate, butter pecan, etc. etc. ice cream. See what I mean--lots of good combinations. You can add sprinkles or chocolate shavings on top or drizzle hershey syrup over it.
It's so very easy to make and it's always a huge hit.
