I would really like to do a southern bbq

and not one of Maines.....which usually consists of hamburgs ....hotdogs.....and salads and such......I want one of those big beefs things that you dollop bbq sauce on........any suggestions for us Mainers
 
I think you're probably thinking of "pulled" beef or pork (or even chicken!) The only thing is, these usually aren't even cooked on a grill. I found this recipe that seems pretty authentic, from Southern Living that you might want to try. Sorry, I don't make this often, because we have so many really GOOD barbecue places around here. In fact, I'm getting carry out from one today, since it's raining and we're not going to be able to grill!

9 Day Cole Slaw

Chop finely:
3 pounds cabbage
1 green pepper
2 onions

Add:

2 cups sugar, let stand.

Prepare 1-cup oil, 1-cup vinegar, 2 tablespoons celery seed, 2 tablespoons sugar, and 1-tablespoon salt, bring to boil. Pour over cabbage mixture. Refrigerate. Good for days.

Baked Beans

½ package bacon, chopped
1 onion, chopped
1 green pepper, chopped
½ cup ketchup
½ cup brown sugar
¼ cup Worcestershire sauce
¼ cup yellow mustard
1-2 small cans tomato sauce
jalapeno slices to taste
1 31-ounce can pork and beans
salsa (optional)

Sauté bacon, onion, and green pepper together. In large bowl combine all ingredients. Place in casserole dish and bake at 350 degrees for 45 minutes, or until thick, hot and bubbly.

I have been asked for this recipe many times. It’s the one my mom used to make. I rarely measure the ingredients and usually add whatever I have on hand, for example partial jars of salsa, Tabasco sauce, stewed tomatoes etc…In our family, we like the baked beans spicy and sweet so I adjust the amount of brown sugar too.

Barbeque Sauce

4 tablespoons butter
1-cup brown sugar
2 tablespoons Worcestershire sauce
½ cup ketchup
1-tablespoon mustard
1 small onion, chopped

Combine all items in pan, cook over medium heat 15 minutes. I usually double this so there is plenty. This is great over ribs, chicken, or mixed with shredded beef. This sauce recipe is a family favorite.

True Southern BBQ takes a lot of time and effort. Most BBQ meats are dry rubbed and refrigerated for at least a day or more then smoked for several hours. Down here where I am from, the meats are usually served dry with sauce on the side, but you can also baste during the last 30 min of cooking. There are going to be a lot of BBQ specials on the Food Network coming soon. I believe the show is called All American Festivals, and they film this thing called the Big Pig Jig, which is some kind of BBQ cookoff, got a lot of good tips on BBQ the last time this was on. Today all the food network shows are about BBQ, and June 3rd and June 4th, the Show about the Big Pig Jig is on. check it out on Foodnetwork.com

I've recommended this before but it bears repeating. Get a Sadler's smoked beef brisket. I find them at Sam's Club. It is fully cooked. Don't pay any attention to the instructions. Lather with barbecue sauce - lots of it - wrap very tightly in foil, put in pan and cook in very slow - 250 degree oven for 3 to 4 hours or more. I made this every year for the July 4 party and people would start grabbing pieces as it was carved.
 
I'd also suggest Paula Deen on the Food Network she has had a couple of shows about southern bbqs lately. The website has all the recipes and they look yummy. I haven't made any recipe of hers yet that didn't come out wonderfully. She's a true southern girl (and as a GA transplant myself :teeth: ) and I really love to watch her true love of food and cooking.
 
I don't know if you have HEB supermarkets in your part of the country but they have excellent fully cooked briskets. You just reheat, pour the sauce on top and eat.

My DH loves her show, he always says, "Now there's a woman who loves her job!"
 
My vote is for one of Paula Deen's! I love going to Lady and Sons, here in Savannah. It's not unusual to see her there, but her son's actually run it. They have several cookbooks out. If you are looking for great Southern cookin', you'll find it with Paula Deen!
If you are looking to try something a little different and you like seafood, try a low country boil. It's one of those dishes that every body does a little differently, so you can put in what ever you have or like. Paula's recipe:

Memphis TN is known as one of the best BBQ places in the USA. Personally I like a sweet, molasses based sauce. To me Corkey's has the best BBQ anywhere around. Also Whitt's is pretty good. Both are well known chains in this area. I saw the special on the travel channel a few weeks ago about BBQ. Memphis came in first place. I would recommend using a Southern Living magazine as one other suggestd. Definitely use Brisket. Aint nothing better than BBQ, cornbread, white beans and iced sweet tea!!! Except maybe fried chicken, mashed potatoes, fried corn, green beans and sliced tomatoes!!! I think I'll go and fix dinner now..........
 
We've been watching the bbq shows on tvfood network lately and now DH is craving bbq in the worst way.

We just got a smoker for our anniversary and now he wants to make brisket and ribs for father's day.
 
of hamburgers ....hotdogs....chicken maybe...steak .....well the meat stuff was not what it should of been.......well it ended up being a big slab of steak with sauce on top......that was it.....I guess I had better gear up and read some of the foodtv recipes.....thanks for the suggestions everyone
 
I also suggest you check out Paula Deen on the food network. Her food is to die for!! yum yum yum! She also did a special on the food network about Southern BBQs and she traveled to various southern states throughout the US. It looked delicious!!
