I need your best (baked) chicken recipe!

I'm cooking for a birthday dinner today and am making chicken. I have one pan of bbq, one pan of honey mustard, and a 3rd pan that I want to do something different with, but don't know what.

How do you season and bake your chicken? I need something that isn't a bottled marinade. I have one person coming who is allergic to corn and can't have the High Fructose Corn Syrup that is in most everything packaged, so I want to do something with seasonings. I have a pretty nicely stocked spice cabinet, so that's probably not going to be an issue unless you suggest something that is a little more unusual.

So how do you season and bake your chicken?

Hi there,

This one is really simple, quite plain, but tasty (not sure if you are looking for a sauced recipe which this is not)

Season the chicken (preferably legs, thighs - dark meat) with salt, pepper, garlic powder and any other dry seasonings that you like.

Drizzle olive oil onto chicken in pan.

Bake with cloves of garlic (unpeeled) and rough chopped onions.

It isn't fancy but it tastes good. The garlic can be squeezed out of the skins to be eaten with the chicken.

Oh my, that sounds YUMMY!!! And I have everything I would need.

Definitely does not need to be a sauced recipe.

Another thing I like to do is use a can of french onion soup and boneless/skinless chicken pieces and bake those together. I would do that, but all of the soup I have has cornstarch in it, and I've already been to the store once and have no desire to go back out!!

Spray your pan with pam. Place boneless chicken into pan. Sprinkle some chopped onions and garlic (powder works as well as minced in this case). Sprinkle some white wine (I usually use holland house white wine since there often isn't an opened bottle of wine in my house) and cover that with some shredded cheddar or fontina cheese.

Bake, uncovered, at 350 for 1/2 hour.

It is from the Atkins cookbook, called Ivan's Crispy Chicken.

It is delicious and different!
 
I make something my kids have dubbed Orange Chicken--and it's guaranteed, they'll clean their plates. Brush your chicken with olive oil and sprinkle with seasoned salt. That's it. YOu can do this with a whole chicken or chicken pieces(or pork chops!) It looks fantastic and tastes marvelous :thumbsup2
 
I season my chicken, generously inside and out, with lemon pepper seasoning. We eat it constantly in the winter months.

I think mumchum's recipe sounds pretty tasty too, though, and might have to try it next time I bake a chicken.
 
Old Bay Chicken

Just put cut up chicken in pan & sprinkle with Old Bay to cover & bake at 350 for 1 hours. Delicious

Here's one of my favorites, my Mom used to make it all the time when I was a kid:

Lemon Baked Chicken
1-3 lb fryer cut up(or 12 pieces of chicken)
Saute in oil with 1 medium onion, chopped and 1/2 cup chopped celery, then put chicken in shallow baking pan

Mix the following with the celery and onions:
1/3 C lemon juice
1/3 C ketchup
2 Tbsp brown sugar
1 Tbsp mustard
2 tsp soy sauce

Pour over chicken and bake at 350 degrees until tender(about 45 minutes)
Add water if needed to keep moist.

Oh, this sounds AWESOME! Unfortunately, I can't make it for today due to the soy sauce and ketchup (both have HFCS), but I'm definitely keeping this recipe for myself!

I dip the chicken into melted butter, then roll in a mixture of parmesan cheese and crushed saltines seasoned with some pepper and garlic powder. Once chicken is coated, drizzle with additional butter, and bake at 350 until cooked through (the crackers will turn golden brown). It's delicious!

I do this, except I use Rita crackers :)

What is HFCS? High Fructose Corn Syrup? Trader Joe's has Organic Ketchup. There is 6 in Maryland.

Oh yes, I do know about organic ketchup. The regular grocery stores also have it. I had just already been to the store this morning and didn't intend to go out. Good idea though, to get that for the recipe.

I ended up going with mumchum's recipe. And it was given a rousing thumbs up!

i've been experimenting with a marinade of honey, red wine vinegar, cajun seasonings, and rosemary infused oils...


best to date ,, in bowl or mainade pan, add chicken, generously sprinkle with cajun spice( i use tony cacheries original in the green can) cup honey, and 1/4 cup red wine vinegar,

toss and let stand...


in small boiler heat 1/2 cup canola, or olive oil ( we use canola i'm alergic to olives)
add in about a cup of fresh from garden rosemary leaves, simmer till rosemary is wilted

let cool a few minutes then pour over chicken, let stand 15 to 20 minutes then roast. or even better pop onto a nice smokey grill..


its even better with a little dash or two of hickory smoked salt in the mix,, i do this with party cut wings, and soak them about a half hour before grilling them. place all the wings into the burger basket for cooking on the grill....

they have recieved rave reviews.
