I'm trying to create some response cards on my own since we need to know a lot more than just who is coming. We need to know ages, resort choices, dates, total number of guests, if they'll have park tickets, etc...

I also want to list on these reponse cards other events we'll be attending such as a character breakfast or cirque du soleil, however, these events will not be paid for by us. How can I word this separate section so that it gets the point across that these events are at their own expense without it sounding weird? Help!!!

How about making a section explaining and outlining what you two will be doing while at your wedding week and say that anyone is welcome to join us but for events that you are paying for make sure to say "so and so are hosting a farewell breakfast as a thank you to our guests for making the trip to celebrate" If you want I can email you a sample of my first newsletter but it isn't completed and we are paying for all of the acitivites associated with it.

I'd try to make it really clear about ticket prices for people. People know that you've paid enough for the event, and I don't think they'd be offended if you asked them to purchase their own tickets to events like that.
"We are looking forward to seeing Cirque Du Soleil on (date, and time). This is something we never miss when we go to WDW, and we don't want you to miss it either. If you would like to join us to see this event you can look at ticket information at...etc." :)

That's a very good idea and very clear!

I agree, thank you!! If I point out where they can make ressies or get ticket info, then it's clear that we aren't paying for it without sounding offensive- thanks!!!!!!!!
