I need help! Which deluxe resort would you go

They are all wonderful resorts and each one will probably be mentioned on this thread. My advice would be to the one with the theming that most appeals to you/your wife.
First, to the OP, CONGRATULATIONS on 35 years! :cheer2: We're celebrating our 21st in a few days. :goodvibes

THIS. This is really the most important issue. What the rest of us say doesn't matter. There are fans of each and every one of them. We've stayed at them all minus the Boardwalk because it has no appeal to us. Now that we are DVC owners, we'll always be staying in a villa. The resort is very much worth the expense to us as we like our resort to be a vacation in and of itself and like nothing else you can experience near home, we almost always go w/ something exotic and tropical. We own at AKV, so that's our fave, but we love the Poly and for the kids, Stormalong Bay at the Beach Club can't be beat. If you want to do it all the way up to the nines, get a Royal Palm Club room at the GF. Those are in the main building and completely SUBLIME! You can sit out at tables overlooking the lobby, w/ a piano player playing and at Christmastime the tree and gingerbread house not only look amazing but the smell is like heaven. Your overlook is limited to those in the RPC so its not busy and they have the most exquisite hors d'oeuvres and drinks out , especially in the evening. There isn't anything more romantic than that on property. We've looked! Nothing compares. And neither of us are into the decor there, it didn't matter, it was elegant and spoils you.

there are some garden cottage rooms (I don't know exactly what they're called) at the Boardwalk. They have their own outside entrances, a little front lawn w/ a picket fence. I think inside there's a livingroom, and the bedroom is a loft upstairs. They look very romantic and adorable.

This is where I would go as well!! The BWI is amazing and romantic plus the location for an adult anniversary is perfect!! The dining opportunities alone make this a best choice IMO!!!

GF is nice, too if you want MK area. For us, the MK area is where we stay when with children, the Epcot area is where we stay for romance.

BWI/BWV, GF, or YC.
BWI/BWV has a lot of non-park options (jellyrolls, ATL, dining, fresh baked goodies, surrey bike rentals, street performers, carny games, and our favorite pool on property, on the BWI side:lovestruc). strolling to EPCOT/DHS (or taking a friendship), and around the BW itself is pure heaven :cloud9: many rooms have at least a partial view of illuminations (picture fireworks bursting over the eiffel tower), or you can watch from the bridge between the BW & EPCOT.
we also love the quiet elegance of both the GF & YC (not BC - it is much more noisy & chaotic). at the YC, you can walk to parks (tho a bit longer than from the BW), and go to the BW at night.
if your wife loves the MK tho, the GF would be best (make sure to book narcooses) for the amazing lobby, piano player, stunning views of MK.

enjoy:)

If you really want to try and pull off a true deception, I maybe wrong, but I doubt she'll believe you were truly looking forward to staying at a Value for your 35th. I'd say Port Orleans, or something like that. Here are a few pros. and cons. from our past stays at deluxe resorts:

Grand Floridian: (1) stay. Very nice, no cons other then access to the TTC requires you to take the Monorail all the way around to change Monorails to EPCOT.

Polynesian: (4) stays. Our favorite by far. Lush relaxing atmosphere; Beautiful resort. Short walk to TTC for Monorail to EPCOT; short Monorail ride to Grand Floridian for our favorite restaurants, Narcoossees, and Citricos. As at GF, great view of MK fireworks and Electric Water Parade.

Beach Club: (1) stay. Easy walk to EPCOT, nice boat ride to DHS. Easy walk to Boardwalk which is kind of cool. Flying Fish at the Boradwalk is good. Lobby is just not as grand as GF, or Poly. Rooms are smaller as well. Ceilings also seem lower. The entire facility is just not nearly as nice as previous 2. Pool is nice.

Contemporary: (1) stay. Must ride all the way around the Monorail loop to get to the MK. It's an easy walk to the MK. Too easy. It's still a pretty long walk, though since your already walking and standing on your feet waiting in lines all day long, the extra walk wore us completely out. Not our favorite.
