doing one park per day (five day pass, but two days at MK)

It’s tough without knowing the details of your trip but just by going with the number of days this is what I would do.

MK- Space Mtn, Mine Train, Peter Pan
MK- Splash, Big Thunder, Pirates or Haunted mansion
AK- FOP, EE, Safari
HS- Toy story land ride (your pick), TOT, RnR

Epcot:
Test Track
Soarin'
Spaceship Earth?? Totally a slow ride but a classic, and the line can be walk-on, or a long *ss wait.

Can't get both Test Track and Soarin' with the tiering in place. Will have to be one or the other.
