I need an impressive quick bread recipe

I'm gluten-free, sugar-free, and generally carb-free BUT I love to bake! :rotfl2: So, I make baked goods as gifts for my friends and family whenever I get the chance.

I'm hosting Thanksgiving this year and want to make mini quick bread loaves for everyone to take home. I want them to have a "Thanksgiving" flavor to them, so no banana bread, etc.

Please post your favorite and most impressive quick bread recipes. I'm a very experienced baker so they can be difficult and/or complex. Also, since these are gifts and my family doesn't follow the same dietary restrictions I do, the fat and calorie content is irrelevant.

How about pumpkin bread? I don't know if it's impressive but it is delicious.
 
Pumpkin bread would be good if I added something on top. Maybe a streusel or nut topping?
 
I'm "famous" for my pumpkin bread (I use the recipe in the Better Homes and Garden cookbook). I don't put anything on top, but I know someone who puts chunks of cream cheese IN hers and she said people really like it.

I think if it must have something on top, I would go with a pecan streusel topping, or maybe just drizzle it with cream cheese frosting or even white chocolate, almond bark, something like that.
 

How about Chocolate bread with crystallized ginger? It's very yummy & I think the ginger makes it eligible for Thanksgiving.

Not really thanksgiving related, but I make a killer beer bread. It has like 3 ingredients in it and is super easy.

3 cups self rising flour
1/2 cup sugar
1 beer

Mis and bake for 45 minutes at 350. Pour a couple of tablespoons melted butter on and bake another 10 minutes.
 
My favorite Pumpkin Bread recipe. I doubled the amount of pumpking it originally called for. It also tastes better if it has been frozen so you can make it today and have it ready on Thursday. Good luck.

3 cup sugar
1 cup oil
4 eggs, slightly beaten
1 large can pumpkin
3 1/2 cup all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp baking powder
1 tsp nutmeg
1 tsp allspice
1 1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 cup water

Preheat oven to 350 degrees

In large bowl mix sugar and oil. Add pumpkin and eggs. Blend well. Add flour and spices, Mix and add water as it gets too thick. Pour into two well-greased loaf pans or 1 bundt pan. Bake for 1 to 1.5 hours. (for muffins bake 30 min)
 
Orange Cranberry Bread. This stuff is so good. I could eat the whole loaf and make this a lot during the holidays

3/4 c Orange Juice
1 beaten Egg
2 T, cooking Oil
2 cups all purpose flour
3/4 c granulated sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1 cup coarsly chopped cranberries
1/2 cup chopped walnuts
shredded orange peel (the peel of 1 orange)

mix together and fold in cranberries and walnuts.
Turn batter into one 8x4x2 lightly greased loaf pan or 3 6x3x2 loaf pans. Bake at 350 for 45-60 minutes for the large pan or 30 to 40 minutes for the small

Every year my mom makes a chocolate bread (loaf) and frosts it with dark chocolate frosting and then sprinkles on crushed candy canes. Super pretty and oh so good!

Whole cranberries or craisins? Sounds good.
 
Real cranberries, not craisins. They are a nice tangy touch in this bread

Nancy! I made your recipe! I tripled it... a loaf for us, a loaf for my parents, a loaf for DHs parents... Now I'm trying NOT to eat all of our loaf before the kids get home from school! Its awesome! Thanks!

Love cranberry orange bread!

A holiday favorite for us is Bishop's bread:

Ingredients
2 cups white sugar
1 cup margarine, softened
4 eggs
4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 cup buttermilk
1 teaspoon baking soda
1 1/2 teaspoons vanilla extract
1 (10 ounce) jar maraschino cherries, drained and juice reserved
2 (12 ounce) packages semisweet chocolate chips
2 (8 ounce) packages chopped pitted dates
1 cup flaked coconut
2 cups chopped pecans

Directions

1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease two 9x5 inch loaf pans.

2. In a large bowl, cream together the margarine and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition.

3. In a separate bowl, sift together flour, salt and baking powder. In a third bowl, combine the buttermilk, baking soda, vanilla extract and maraschino cherry juice.

4. Stir the milk mixture and flour mixture alternately into the egg mixture until a soft batter is formed. Fold in cherries, chocolate chips, dates, coconut and pecans. Pour batter into prepared pans.

5. Bake in preheated oven for 90 to 120 minutes, until loaves are firm and a toothpick inserted into the center of each loaf comes out clean.
