I need something easy, low fat, and kid friendly.

Usually, I make breaded chicken cutlets, but my DH asked for something low fat.

I don't do low fat. I don't know how. Do you have any ideas other than grilling them.
 
How about marinating them in an oriental type sauce (teriyaki) and cutting them into chunks and putting them on skewers. You can either grill them that way or saute them, on short skewers. This will make them low-fat, but fun for the kids. But, not too many people have the wooden skewers handy--it might mean a trip to the store.
 
We like lemon pepper. We either use the liquid maranade, or stuff in a jar (spice section). I also love fish with lemon pepper.
 
The easiest (and best IMHO) to make chicken breasts is to pan fry them in a little olive oil (not too high so they dry out) until they brown on all sides and about 95% cooked (no pink). Take 1 can of fat free cream of mushroom soup and 1 can of fat free cream of chicken soup and mix the together with about 2 cups of skim or lowfat milk.

Mix soup mixture (save 1.5 cup) with about 1.5 cups of instant rice ( I add broccoli too but you can substitute or leave it out) , put in casserole dish (sprayed with Pam) put chicken on top, cover with foil and bake for 30-40 mins.

Very good, very quick very low fat and my kids love it. Yes it's basically the chicken recipe on every can of Campbell's soup, but hey, it's a classic!
 

Here is something really easy and very tasty that I made last weekend. I called it crockpot chicken.

I bought a really cheap bottle of white wine and poured about 1/4 of the bottle in a crock pot.
Put a package of chicken breasts in the crock pot.
Added 2 packages of dry Italian Dressing packets.
Salt & Pepper.
Cajun Seasoning (optional)
Add another 1/4 white wine.

Simmer in the crock pot for 2 - 3 hours.

Delicious! The chicken is very tender, juicy, and very tasty! All 3 of my kids loved it.
 
Marinate in Italian dressing and either bake or grill. They are wonderful. I use Kraft Zesty Italian.
 
You can do lowfat breading. Mix a little mustard into lowfat mayo and coat chicken with mixture and then dip chicken into breading mixture (I like cornflake crumbs) and then bake in a 350 oven for 30 minutes or so.
 
DH and I like to either marinate them in honey mustard salad dressing or Italian dressing.

Sorry, I just couldn't resist using that "smilie." I have such an aversion to Cream of XXXX soup that it's not funny.
 
Pan fry them with a little olive oil, or even just cooking spray. Then add a can of crushed pineapple, a red or green pepper, and 1/2 cup of honey mustard. You can serve with rice. Good and easy.
 
My son love this recipe-

Baked Chicken

4 boneless chicken breasts- not cutlets
1 egg, beaten
½ cup parmesan grated cheese
1 ½ cup potato flakes
pepper to taste
1 stick, margarine or butter

In a 9x13 baking dish, melt margarine or butter in 350 degree oven. Beat egg, set aside. Combine potato flakes, parmesan cheese and pepper. Dip chicken in egg, then into potato flake mixture, make sure to coat well. Place chicken in baking dish with melted butter. Bake about 30 minutes, or until chicken is done

I don't like cream of anything either unless I make it from scratch.

I'm trying to avoid processed foods altogether.

I think I'll go simple and just marinade in oil and vinegar and then bake. I also have some mushrooms in the frige. Maybe I'll saute them in PAM and then bake with the marinated chiken.

One question: How long do they have to marinade?
 
I made a really simple dish last night and it was really good. I sprayed some Pam in a baking dish, sprinkled some paprika, garlic salt and pepper on the chicken, cover with foil and baked. I cut it up and served over rice. It was yummy.

We do this, but add in some fresh rosemary - you could probably use dried as well. Then grill. YUM!
 
Chicken Parmesan.... I do the easy, easy way...Italian shake & bake crumbs... toss the chicken breasts in the seasoned crumbs and put on a baking sheet-bake for 25-30 min. and then top w/ mozzarella cheese. Cook additional 3-5 min. until cheese is bubbling and serve with pasta and tomato sauce :)

Parsley
Seasoned salt

Cover chicken with the thick mixture of above and bake at 350..sooo good..sometimes I add ab it of lemon juice to it.

I was going to suggest the exact same thing! This is a staple at my house.
 
Way easy:

pound your chicken breast as thin as possible

Spread herbed cream cheese ( low fat wont work , you cannot bake with it), so a thin layer of cheese should do. You can had a slice of smoked ham or proscuito , then roll the breast (you want a long cigar , not a short one) and secure with thoothpick.

Brown all over in a pan that goes in the oven , then pour store bought pasta sauce ( without meat and preferably without sugar added if you watch you weight) Any flavor will do , in fact , you can play with a different pasta sauce everytime you do the recepie and even change the flavor of the cream cheese.

Put in a preheated 350 degree oven for 30 minutes: sserve with green, and pasta with garlic oil or rice , to get all that pasta sauce !
 
at any given time I have AT LEAST 4 Lawry's marinades in the house.
not all are "low fat"...but they are dang tasty!

I think I have the Lemon Pepper, Herb & Garlic, Chipotle Baja (YUM!), Mesquite, and Teriyaki ones in the house right now.

marinate for a half hour or longer
dump in glass dish
cover with foil
bake.
done

I'm such a "blah" cooker. heheeh...but I LOVE chicken teriyaki with rice pilaf!
 
We are having Caribbean Chicken with Lemon Rice and broccoli tonight trying to keep somewhat in the South Beach Diet parameters so we can fit into the bathing suits in a month.

The Marinade is simple and the chicken breasts only needs to soak a couple of hours

Combine together
1/4 c. Cooking Oil *we use olive oil because it's better for us*
1/4 c. Lemon Juice
1 Tbsp. Paprika
1 Tbsp. Honey
1 tsp. each
Garlic Salt
Ginger
Oregano.

Then we grill them on the grill.

Lemon Rice *we use brown rice instead of white but you can do either. The brown takes longer*

1 stick butter
2 C. rice

Melt butter and add rice. Saute for a few minutes. Add 2 cans of chicken broth. Boil for 20 min *white rice* 60 min *brown rice* on medium low.
Add 3 Tbsp. lemon juice (but I add waaay more than that because we love it lemony)

Add some broccoli and a small glass of wine for us and whatever the kids want and voila it's done. :teeth:
