Hearty Chicken Bake
3 cups hot mashed potatoes (I use instant)
1 cup shredded cheese
1 (2.8oz) can french fried onions
1 1/2 cups cubed cooked chicken
1 pkg (10oz) froxen mixed veggies, thawed and drained (I like peas, carrots, and corn)
1 (10.75oz) condensed cream of chicken soup
1/4 cup milk
1/2 tsp ground mustard
1/4 tsp garlic powder
1/4 tps ground black pepper
Preheat oven to 75. In medium bowl, combine potatoes, 1/2 cup cheese, and 1/2 can onions. Mix thoroughly. Sppon potato mixture into greated 1.5quart casserole. Using back of spoon, spread across bottom and up sides of dish to form a shell. In large bowl, combine chicken, veggies, soup, milk, and seasonings. Pour into potato shell. Bake uncovered at 375 for 30 minutes tor till heated through. Top with remaining cheese and onions. Bake uncovered 3 minutes or till onion are golden brown. Let stand 5 minutes before serving.
