Why is it a secret? If it comes up in conversation, I'd say "I thought they said they weren't going to be here for Thanksgiving." And if it doesn't, assume they will behave like grownups and tell her on their own.

I agree with this. I wouldn't make a point of saying anything, but if it comes up, what's the big deal about saying something?

I would suggest you send an open email to everyone that is participating and ask them what they want to bring or assign them something. At that point you will know who is coming and who isn't-- so will everyone else. You can reassign dishes. Its possible that the nephew and his wife will change their mind and be there.
