We always stay at the Hyatt, which is right in the airport terminal. No shuttles needed. It is a bit more expensive, but I think that the convenience factor cancels out the extra cost. We also use the
DCL busses, and check-in for them is right in the lobby of the Hyatt on the morning of the cruise. In addition, with the DCL transfers, you can leave your luggage in the hall outside your room, with the cruise line's tags on them, and they'll be collected and transferred to the ship. On the morning of the cruise, we usually get up and go to breakfast, come back and finish packing, check out using the TV, and then leave our bags outside the door and go check in for the bus.
You can spend significantly less staying at a hotel off-property, but in order to catch the DCL bus, you'd have to take the hotel's shuttle back to MCO on the morning of the cruise. I just feel that the extra $100 or so is worth not having to find and wait around for a hotel shuttle to get to and from the airport.
