So far so good, lost 18.5 since I began on 1/4... survived two weekends at WDW on it and didn't gain during those trips and was able to find ample Atkins acceptable and yummy options for food while there. Six of those pounds I know where lost since last Sunday ... yahoo! That's about a pound a day. Anyhow I love the flexibility to eat where I'd like and not have to worry so much about the fat/calories ... counting carbs is way easier I think and offers more selection. My BP is down and I feel "lighter". I don't feel so weighted after I eat and I don't rely on food to get me through the day anymore, infact sometimes I have to remind myself to eat...lol! Every once and awhile I'll have a craving, but I satisfy it was a turkey rollup or some cucumbers and dressing. Since I've had a cold the past two days I've also come to love lo-Carb soup ... how easy too... I will post the recipe if anyone is interested. I made Broccoli and Cheese and also a Fish Chowder tonight ... both I think around 4 carbs per serving maybe a little less ... will have to check, but SUPER good and way better I think that the Carb loaded ones in a can. The fish chowder I thought up on my own as I cooked Flounder for DFiance tonight and wasn't up to solid food yet. Gonna go have some and I will post recipe if anyone would like. :wave:
 
I'm sorry you haven't been feeling well the past few days but just wanted to say Woohoo on your lose! Good for you.

I would like the soup recipes when you get a chance. Would you also share some of the places you ate at while at Disney? I think I know where we'll eat at MK and AK but I could really use some help with suggestions at Epcot. I guess the PSB is out and of course I can't have my usual fish and chips from the UK pavilion. Any suggestions are appreciated.

Fish Chowder

2.5 Cups of Cauliflower (2.5 total net carbs)
1 to 1 1/4 cup Heavy Whipping Cream (6.4 net carbs in one cup)
2tbsp. Butter (no carbs)
1/2 Cup Cheddar Cheese (to your taste, no carbs so add a little more if you want)
3 Flounder Filets (could be any white fish) (no carbs)
Onion Powder (No carbs)
S&P (No Carbs)
Chicken Bouillon Cube
2tbsp. Cream Cheese (I used whipped) (1.6 net carbs)

Forgive this recipe if it seems a little sloppy...lol, as I made it as I went tonight, but it turned out pretty darn good and its lo Carb... and I just love fish and chowders.

In a sauce pan, boil Flounder in 2 cups of water, a dash on onion powder, add 1 tbsp of butter and the bouillon cube, cover and boil for around 10 minutes till white and flaky. Drain broth into container and flake fish, set aside.

Boil Cauliflower for 10 minutes or until soft, drain and use hand mixer to mash. Mix in 2 tbsp of Cream Cheese and a dash S&P if you wish. After this is mixed add in Cheddar Cheese. Mix again until consistency of Mashed Potatoes. Add in fish, if you want you can mix this with the hand mixer as well or leave in chunks.

Now pour 1 cup of the broth into the mix, stir. Add the Heavy Cream, stir. If this is too thick add more broth, it has no carbs so use as much as you want/need. Blend with mixer a little more. I like to bring it to a boil once more and enjoy. (Adjust S&P and Onion Powder to your taste, they are not required).

This soup taste very rich, but don't worry, I used the Atkins Carb counter and calculated the carbs for each ingredient and the total for the whole pot is 12.5, and that's throwing in 2 carbs to cover the trace in the cheese I used and the bouillon cube said trace Carb. Being that I believe there is atleast 6 cups in this making it only 2 net carbs per serving of one cup. Yummy!
 
We ate at Beirgarten at EPCOT, had the sausages, roast pork, salad, Savoy and red cabbage and sauerkraut. Also try the restraunt, I can't recall the name but its near the front that has the burger toppings bar... you can order a double cheese burger, ask for carrots instead of fries and two people can share... meaning order an extra plate, ditch the bun then pile lettuce, veggies, etc cut burger up on top of quick yummy and VERY cheap lunch... I think $6.99 maybe for the double burger.

NOTE: Any restraunt in WDW will give you the recipe for any menu item so you can review the ingredients in them before you order and if you like it you can also take the recipe home, for free. Just ask your server, we did in Germany.

I like to bring it to a boil once more and enjoy. (Adjust S&P and Onion Powder to your taste, they are not required).

Being that I believe there is atleast 5 cups in this making it only 2.68 net carbs per serving of one cup. Yummy! Check your indiviual ingredits as you use them, be sure to subtract the fibers from the total carbs as they do not count. My cream was slightly less carbs then the Atkins site listed it should be but for the purpose of this recipe I used their carb count.

NOTE: You could also precook some chicken bites or strips and add for chicken and cheesy broccoli soup ... chicken is Carb free so its a free addition.
 
I would think this recipe could be used with any allowed veggie and or meats ... replace them and use the same cream, etc. I was thinking of "Faux Potato" and Steak soup, like the Campbell's Thick and Chunky Steak Soups, I will try this over the weekend. Using the Chowder Recipe but replacing the fish with steak or stew beef.

I love Atkins too, it's the easiest way of eating that I've ever followed.

Although I have not tried to freeze these yet they do well in the fridge and for reheating. They actually are even richer and seem thicker if left overnight and reheated and eaten the next day.
 
You're doing a great job! Atkins is great, and you're really getting the hang of it. Losing weight while at Disney is especially admirable considering the wealth of goodies available there. Don't forget to share those recipes!

Congratulations on your wonderful success to date. I too absolutely love this way of eating. I lost 45 pounds and have been at my goal weight since the first of September 2003... been maintaining ever since. Eating well and feeling great. :teeth:

Congratulations on your success with Atkins. I am on day two of induction and have found it very easy so far. I've had a few major cravings, but was able to beat them with a deli turkey and cream cheese roll up (yum!). I'm going a little overboard with the water, though, and have been spending a lot of time running to the little girls room!

I love to hear sucess stories; you are an inspiration to me as I start a new, healthier lifestyle!

OMG! 18.5 pounds is WONDERFUL! Congratulations on your Atkins success--I'm glad it's working so well for you! You deserve a big WOO HOO for all your hard work! Keep posting--I can't wait to keep hearing all about your accomplishments!:) :) :)
