I have just started eating hummus. I never really liked it before but now I love it! I even broke my vitamixer making homemade hummus ( thank God for a 7 year warranty! ).

Anyway, I like all the normal stuff that goes in hummus.... garlic, red peppers, scallions, hot peppers.....

But do any of you folks have any unusual ingredients that you add to hummus?

BTW, I'm surprised hummus isn't healthier for us than it is.

Hummus can be very healthy, it just depends on how much oil you use!

My favourite is a nice roasted red pepper hummus. With a little extra garlic. I found a good recipe:

2 red peppers
19 ounces chickpeas, canned, drained
2 tablespoons extra virgin olive oil
2 cloves garlic
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper

1. Preheat oven to broil. Place red pepper on a pan and grill. Roast until
soft and browned, turning occasionally. Remove from oven and steam/cool in a bag. Peel away the skin and discard. Cut pepper in half, remove stem and seeds and discard.

2.Drain and rinse the chickpeas. Place all ingredients in a blender. Add more seasoning as desired.

I'll go through periods where I just crave the stuff. But I don't like stuff that's too oily, and besides with too much oil it's not exactly Weight Watcher's friendly!

Since this recipe only has 2 tbsp of oil it's pretty healthy.

I like black olives or kalamata olives in hummus. Also roasted red peppers (but that's more usual). Also the 40 spices and Dill (by two sheiks) is good.

tricia.

I love it, but I'll only eat a teaspoon or TBS. because of all the carbs!

Yes, but just for info, chick peas are low on the glycemic index.

When we were at AKL, Boma had a wonderful sun-dried tomato hummus! It was outstanding! Unfortunately, they told me they were buying it & therefore couldn't give me the recipe...but that's what I would add. :teeth:

Oh - they did give me their "regular" hummus recipe if you're interested.

HUMMUS
from Boma, Animal Kingdom Lodge, WDW

32 oz Chickpeas, canned, drained, and rinsed
5 Tbl Tahini, mix well
2 Tbl Garlic, roasted
10 Lemons, juiced
1 tsp Garlic, fresh
Salt and Pepper

Place chickpeas in robot coupe. Puree. Add tahini, both garlics, and half the lemon juice. Mix. Adjust lemon juice and finish with salt and pepper. Yield: 20 servings

I love that hummus at Boma, too! I wish that I could find the specialty kinds around here since they can't give us the recipe. Maybe I will just have to go back to AKL and eat at Boma...when I save up the money for the next trip!:teeth:

I've made it a lot.

I see that you are in Valley Forge. The Trader Joes on Swedesford Road (that shopping center near the middle school/VF park) has some neat ingredients. (At least they used to)

You used to be able to get tahini there easily. It came in a a metal can with a plastic lid. I haven't lived in the Wayne area in about 3 years so things may have changed.

I sometimes put dried tomato, and other items.

Have you tried Baba Ganoush? or Tabouleh? You can get really adventourous and make your own pita.

Try adding some roasted eggplant, it's delicious!::yes::

Wouldn't the eggplant make it Baba Ganoush?

Just wondering.

It might, I don't know what Baba Ganoush is!
