Disney appears to allow for a max of 14 days to book a package. But only 10 day park tixs are offered. How would a family get tixs for the remainder of the 4 days? And would the 180 day dining and 60 day FP+ Windows open based on the 14 day resort stay or open based on the 10 day park tixs?

Lastly will Disney allow 2 families to "share"/split the 14 days where family 1 comes days 1-7 and leaves on day 8 -- and family 2 comes for days 8-14??
 
I can only answer one piece of your question - in regard to the dining, it works "180 + 10" so on your 180th day, for on-site guests, you can only book 10 days of meals at a time.
 
If you are a US resident, you would have to then purchase a separate 4 day ticket, or get an annual pass. UK residents have an option to buy a longer ticket...not sure about Canadians. Another option is to get the water park option. You would get 10 water park entitlements and use those on some days and not do the parks. Tickets are assigned to specific people. The first time you enter the park, you scan your finger. So you cannot buy a 10 day ticket and have one family use some of it and another family use the rest. The dining and FP windows open 180 and 60 days prior to check in date.
