How to do 4 parks in 2 days? (long)

DH and I are heading down to WDW (no kids!) for a VERY quick trip in October to belatedly, celebrate our anniversery this year. We will arrive at MCO early evening Tues 10/18 and will depart late morning Sat. 10/22. We only plan to do the parks on Wed and Thurs as DH has his heart set on spending one full day at a Disney resort (we are staying off site the first 3 nights, but will move to CSR for our last night). We have left over park hopper tickets that we plan to use, and we will have a car - which will make things a little easier. Here's the thing - we have very few MUST DO's at most of the parks, but I am still having trouble trying to figure out how to split up our days.
Here is a list of what I am hoping to do at each park -
(DH does not do thrill rides at all!)

MK:
take pictures of the castle
Country Bear Jamboree (I have never been)
Maybe ride Buzz?
Shop, take in the atmosphere, maybe ride the train...

MGM:
Backlot Tour
Who Wants to be a Milionaire?
Beauty & the Beast show
Stunt Show
Maybe see some of the streetmosphere acts?

Animal Kingdom:
Dinasour
Try to see Devine!?
Shop, take in atmosphere - wander the trails etc.

Epcot:
Soarin' (hope he can do this -he HATED TT!!)
Living Seas
Crush? (the talking turtle show - hope I got the name right!)
Wander through the country's - he wants to eat his way around the world ~ (F&W festival).


I also want to work in:

~A b-fast at Kona ~ HAVE to try that tonga toast for myself!
~A lunch (or even dinner!) at B&C
~B-fast at WC (thinking of doing this before heading to the airport on Sat)
~A carraige ride at POR, follwed by checking out Bob at the piano bar, that I've read so much about.

The rest of the meals are up for grabs - he wouldn't mind repeating O'Hana and/or H&V - we'll see. We will plan to do Illmuminations one night for sure, but not sure if we'll do Fantasmic or Wishes this time or not.

SO given all of THAT (sorry it's sooo long!) how would you schedule your days? I was thinking of the following - but I keep changing my mind - so ANY input would be very much appreciated!

Tues Eve - check in at Cypress Point, head to DD to eat at EOS or maybe TE?
Wed - B-fast at Kona, MK for a few hours, late lunch at B&C, MGM till close
Thurs - AK for a few hours, Epcot till close
Friday - Check in at CSR, enjoy resort most of the day - then head over to POR for carraige ride and the piano bar in the evening.
Sat - Check out, b-fast at WC, head to airport

Sounds like a good plan.
But you might want to wait till the EMH came out to make a final plan, I know they won't be out for a few months but the last few months wed was a evening EMH in MK.
 
That's a good point Spoonfulofsugar - I am not up on the EM hours at all, so I'll definately take that into consideration when making the final plan!
Anyone else have any thoughts?
 

We went to 2 parks in 2 days and didn't even see half the stuff but also had a 4 year old with us. I wish I had had another week.

As for DTD, I would suggest eating at Wolfgang Puck's Express. We went to Rain Forest first and the wait was 2 hours. The EOS line was out the door. We walked over to WPE and there was no line. I had tortilla soup and a side salad, BIL has lasagna, DH had chicken strips, and DD had pizza. It was all wonderful! The prices were great to.
