Your question is pretty general, but my experience has been that the signatures keep their "staples" on the menu, and change only certain choices seasonally (i.e., 3-4 times a year at most), based upon availability.

As for venison, you are most likely to find this option at offered at Tiffins or Artist Point. Though I couldn't tell you for sure, or when.

I peruse menus often and don't recall seeing venison very often, but there is currently a tartare on the Artist Point menu. Jiko also seems to have Elk on the menu occasionally.

As the previous poster said most restaurants update the menus with the new season, but will keep some standard items throughout the year. The one exception is California Grill who seems to update their menu with much more regularity
