5 day Park hopper with water fun to a 10 day non exp.
I called Disney to ask them and the girl said that if I add the non expriry 1st (40 + tx) then pay the extra $12 to upgrade it 5 more days then it will be a 10 day non exp.
Is this right?

Also I have a 10 day non exp ticket that I with 5 days remaining and I *may* want to go into the parks for 6 days, can 1 day be added to a 10 day ticket or is this the max that tickets can be?
Thanks for ALL your help!

No, you will you have to pay the difference between a 5-day MYW Premium (expiry) and a 10-day Premium (no expiry). Even if you do the extra step and upgrade to a 5-day MYW Premium (no-expiry), you will have to pay the difference between that ticket and the cost of the 10-day Premium (no expiry).

There is no 11-day ticket. But aside from that fact, if ANY pass is beyond the 14-days following it's initial use, you cannot "upgrade" it to a pass with more days. You can apply a "dollar credit", which basically takes the value of the remaining days and applies them to the purchase of a new pass. But be careful when doing this, the "value" of your remaining days is not that much. The dollar value is close to the price of a 10-pass minus the cost of a 5-day pass.
