I use the Ziplock bag method too! I put one entire outfit (excluding shoes) in a bag & then label the bag w/ the day (or event) it is to be worn. Some days might have two bags depending on what is planned for the day - like Monday might have a bag marked "Monday - MGM" & a bag marked "Monday - Dinner ('Ohana). So easy to get ready!!
I also dress the kids (and myself & DH) in coordinating shirts & shorts - For example, Monday is "red" day, Tuesday is "green" day, etc.
I'm an over-packer, so my packing list for the kids normally looks something like this - -
1 outfit for each day (shirt, shorts, underwear)
5 "extra" outfits (shirts & shorts)
3 extra t-shirts
1 pair of "comfy" knit pants to wear in the room
2 nicer outfits for dinner (or for however many times we have dinners planned - like at the resort restaurants)
1 pair of jeans
pullover sweatshirt (We so didn't need sweatshirts - but they were Disney!)
2 pairs of PJ's
3 swimsuits w/ matching T-shirts/cover-ups, pool sandles, & hats
lightweight sweater/sweatshirt
socks (they wore sandles, but I packed one pair of socks for each day)
extra underwear (one extra pair for each day)
sports sandles
dressier sandles for DD (for dinner)
tennis shoes
I packed their costumes & accessories for our princess meals (DD's Tinkerbell costume & DS's Peter Pan costume) in a separate bag.
They each had their own suitcase for their clothes. They each also had a bag containing their books, toys, stuffed animals, etc. All of our toiletries (including hair accessories for DD) went in one bag.
Various other things -
Their pillows
The stuffed animals & security blankets that didn't fit in their bags...
A bag w/ the DVD's they watched in the car
Sunglasses
Small flashlights
Small water bottles
And anything else I think of that they might possibly need... Drives DH crazy!
