How many times

Not too much. Usually by the 180 day mark DW and I have discussed various options and possible contingencies if we aren't able to get our first choices. We start by picking the park we're planning to visit on a specific day, and build our plans around that. It's usually only one ADR per day either for lunch or dinner. We'll make up the rest by having breakfasts or snacks at the villa.
 
I am also driving myself batty trying to choose CS locations, but now that you post that I am not sure why I am concerned with that now. I will focus on the adrs and worry about the rest later. One of the big things for me is choosing the time. Don't want to do it too early, don't want to push it too late. Who knows what we will be doing at the time, it makes it hard to choose.
 
Yes, I do... We're 16 days away and between 180 and 16, I can't tell you how many reservations have been made and cancelled, changed times, changed days. I still have a couple I'm thinking about cancelling.
 

I change mine about twice a week. I will then change them a few more times between my 180 day mark and the trip. Its inevitable when I get there that we will cancel a meal for some reason and eat somewhere else. This happens every trip, but planning for Disney trips is a ton of fun for me and I enjoy the dining immensely.
 
Before our 180 day, not too much. I usually have a base plan and work with that. I know where we want to eat and around what time. But, as park hours change, the crowd calendars get updated, then I really start checking and double checking to see if I need to change parks or meals. I try and get an ADR for whatever park we are in or which resort is easiest to get to from whatever park. I'm a planner, I love planning park days and meals!
 
Our master list went through 3 changes before our 180 day mark and I've made one change once they were set. I'm not done yet because something tells me once ROL is open I'll change one to a dining package. @Pepper pots is on list 7 currently. Planning is 1/2 the fun!
 
We try to have things locked down well before our 180 day mark. Not being on the dining plan this year helped a lot, so we are only doing 4 TS during our 8 day trip in Sept. We chose our 4 favorite places and decided we weren't changing them at all. We actually had these 4 chosen months ago when I returned from my November trip. Hoop Dee Doo Revue (a must every trip), Cape May Café breakfast, Garden Grill dinner and Akershus breakfast. It was pretty easy this time. Just hope I have no problems in 2 weeks when I book them!

We sometimes make minor changes after, but all the really big decisions are made beforehand.

...of course, we didn't book dining this time until like 45 days out, and we only added a couple more this week. So, uh, I guess the answer is really: "It depends."
 
I'm 107 days out of our ADR reservations and I have a basic plan of places we want to try this trip but it changes almost daily at this point. We're not going with the dining plan this time so my options are all over the place. I want to do 2 tables most days (breakfast or early lunch and then late dinner). I don't know if that's a good idea or not. My husband hates Disney planning so taking this all on is a lot of pressure! I guess I have a few months to figure it out.
