how many tickets should i buy

We are going for 8 days, the first day we are getting in late around 6:30pm so we have Sunday-Friday and leaving again on the following Saturday early in the morning. We would like to take 1 day to go to universal Studios,

so im saying Sunday - Thursday.. I want to see all 4 disney theme parks so that gives us 1 extra day should we buy 5 tickets? and how many days should we visit each park. I have heard MK is like a 2 day trip and is park hopping even worth it?
 
Buy a 5-day ticket.

Go to MK on 2 days and each of the other three for one day each.

You don't need a hopper. If you decide that you really want to hop, then you can add on the hopper option later.
 
Heck...depending on how late MK is open on your arrival day, I'd be tempted to get a 6 day ticket and go sat -thur. One benefit of FP+ is you can reserve rides on your first day. I think going from 5 days to 6 days is about $11 /ticket. It's worth it for me, but understand others might wanna get to bed early. I love catching Wishes and the Electrical parade on my first day tho.
 
Of course no one can tell you how many tickets you should buy, and everyone's park strategies are different. A couple things to keep in mind from the 5th day on each park ticket is only 10-12 dollars, so you are not saving much by not buying additional days. (Remember, you can add on to your ticket anytime up-until the last day of use.)

As far as park hopper goes I would never not get it, over the length of stay it really doesn't cost much. If you are staying on property then you are entitled to the extra magic hours, and many times I hop parks on those days. Also, I sometimes like to hop to make sure I see the different fireworks shows. Animal Kingdom typically has closed at 5:00 pm and I would tend to hop on those days as well. (Recently, they have had AK open until 8 so that may reduce the hopping desire.) Also, I will sometimes hop to try different restaurants. For me MK is my least favorite park, but does have a few nice rides so I spend a couple half days going and doing those. You mention one day for Universal, keep in mind Universal is also two parks, so I would plan on taking it in on the slowest day or if you are up for it, plan on going on a day that the extra magic hours are late at the MK (which stays open the latest to begin with) and go there when you get back from Universal.

In any case, there are many strategies make yours and have fun.
 

with a 2 and 7 year old i dont know how well they will handle all day at the park and hopping to others that close late. I def think i need 2 days at MK from what i've read it seems like you just cant do everything in one day

Buy the minimum amount of days you think you will need without hopping. Once you are there and have used the ticket at least once, you can easily upgrade to add extra days or hopping if/when you need it.
 
I don't think there's quite enough at those parks to fill a whole day but I think it's good to have some easier days too - go morning through lunch, relax at the hotel, dinner at another resort. Or sleep in, and go to the park later.
 
i wasnt sure if it would be worth the money to do park hopping for hollywood studios and animal kingdom and then use one of our extra days to go back to another park we loved like MK or Epcot.. i looked at some itineraries and they all seem to show MK at least twice
