How many sandwiches should I make?

I'm having an 8th grade graduation party for my son tomorrow. At first I was just going to have cake/ice cream (I will normally have a full blown picnic for these types of celebrations or even birthday parties) but this time I wanted to take it easy and relax and enjoy the company.

Anyhow, at the last minute (just this morning) I've decided to make little finger sandwiches. I'm going to make egg salad, ham salad and chicken salad (the usual culprits). I'm having 30 there. 18 adults/the rest kids ages 10-14 and one 1yr old.

How many of each flavor should I make for 30 people? The other stuff that I'll have there is a taco salad, deviled eggs, chips/dips, cheese/pepperoni. Along with the cake/ice cream.

What do you think?

For finger sandwiches, I'd say 6 per person.

Edited to say I meant 6 total per person, 2 of each flavor.

It might be easier to have a few big subs...what time is the party? Is it at lunch time?

I'd make it real easy and order a sandwich or sub tray. I don't think the kids would be too keen on egg salad or ham salad sandwiches; I know mine wouldn't. :upsidedow

I agree - one eats egg salad here, two eat tuna, and I think they'd be horrified with ham salad.

I think kids will eat whatever you fix. My son loves egg salad. Around here the tuna would go untouched but loads of people love tuna. I agree that I'd probably just go out and buy some subs and cut them into small slices.

I wouldn't "make" any and have them ready to make. I would get some dollar buns from the bakery and have bowls of the egg, tuna and ham salad out so kids can make their own. This way you can pack up the whatever doesn't get eaten. Premade sandwhiches don't really store all that well in the fridge.
