Is there any way to find out how many people the rides can hold? I know Kali River Rapids will hold 8, but how can I find out about the rest from all the parks. We are a family of 7 and I was just wondering how to split up on rides.

tell the cast member loading the attraction the total number in your party, they will split you up. They will know the best configuration, and they will divide you appropriately.

(a lot of times, larger parties will try to split themselves, thinking they're making the CM's life easier. The reality is the opposite. Consider the following scenario:

CM: How many?
A: 4
CM: Ok, you can take that last empty row in that vehicle.
CM (to next person after 4): How many?
B: 3, But we're with them *points*
CM: They told me 4, they must have wanted to get rid of you. You'll have to wait for the next vehicle )

I don't know a list of all of them, but are there any in particular you want to know? I might can remember some of them. And some may depend if you have small children, like HM or Peter Pan you can fit 2 adults and 1 small child in the vechile.
Off the top of my head for the bigger rides:
Mission Space: 4
Test Track: 6
Soarin: a huge row, shouldn't be any problem to stay together
Expedition Everest: 2 per row, 6 per train car
Splash Mnt: 8
Space Mnt: sit one behind another
Big Thunder: 2 per seat
Rock N Roller: 2 per row, 4 to a 'car' (for the picture)
Tower of Terror: 4 per row, except the back row which I think is 9

Hope this helps, let me know what others you may need.
