I think that a week is normally adequate for a medium-paced touring plan for someone not too familiar with the parks. That is just for the basic four parks and maybe a waterpark and some time at Downtown Disney. Of course, it's easy to spend more time or even less depending on your group's interests.
I would say to allow 2 days at MK, 2 at Epcot, 1 at MGM and 1 or less at Animal Kingdom. Then another day at a waterpark. This won't allow you to see everything but you should be able to hit the highpoints.
You may want to split up from time to time too to allow everyone to work in their own interests and downtime.
