We go in October - so a more crowded time than September. Our experience
1. At a busy lunch time I plan 45 - 60 minutes for a QS lunch
2. Table service dinner I plan 90 minutes
3. Buffet you control yourself. You get your own food, you eat at your own speed etc. You can ask for the check as soon as you are seated and settle your bill quickly if you want
4. Character meals I don't know but I think most say 60 - 90 minutes
5. Signature restaurant 90 - 120 minutes
I plan an hour at each meal. Also I add time in for not being seated right away. Some place we were sat right on time and others we had close to a 45 minute wait. The signature restaurants always seemed to have the longest wait for us.
ETA: we ate QS lunches early - around 11:00. Our dinner (TS) reservations were between 5:30 and 6:30. I planned 90 minutes for TS just in case, but never needed that long.
