You should save time by using the DME luggage tags and not getting your own bags from MCO baggage claim. You SHOULD be able to do it in around 2 hours, but 3 hours wouldn't shock me at all.
How are you planning to get from the airport? Back in March we used DME and, from landing and collecting our luggage to entering Epcot (walked from Boardwalk Villas) was almost 3 hours. We waited nearly 45 minutes for DME to leave the airport and we were the fourth drop off at WDW.
I was planning to use the DME. So if our flight arrives at 11, we should be able to be in a park by about 2. I was considering that as a good night to possibly do the Hoop De Doo Revue, since MK closes at 7 that night, we could go to MK from 2 (hopefully a little earlier, but I will count 3 hrs to be safe) to 5 (or what time would we need to leave?) and take the boat to FW for a 6:15 showing. Would that be a safe estimate?
Or maybe I should make that the night to try to get BOG ADR's so we can stay in the park till they kick us out? If you have ADR for BOG, and are still eating when they start Mickey's Christmas party, what happens then?

That's a safe guess. Our first day is similar, but we'll be at HS with a 7 pm closing. I figure it'll be good to get a decent night sleep that night so we're fresh for RD in the morning.
It can, but its not typical. I believe 60-90 minutes is typical. It depends on how busy arrival is - there have been times when we had to wait in line at the airport for a good 30 minutes and it took close to two hours. Other times, it was much quicker. The reason 3 hours was quoted for OP was due to the ECV rental situation.
Ditto to everyone else: 2-3 hours depending on what resort you're staying at. If you don't have to wait at your resort for a bus to the park (and can walk/monorail instead) you'll save a little time.
I don't think we've ever made it in less than 3 hours - just too many variables.
I just did that a couple of weeks ago staying at AKL so 2 stops after AofA and with an offsite rental company.
I was on ME at around 9:30 AM and at AKL and in my room by 10:30 AM. I had my scooter by 11 AM. The company actually called me while I was on the ME bus to set up delivery and they were there promptly.
I easily would have been in the park in under 3 hours if I didn't have to wait for my friend who drove down.
Just my experience on my last trip. I don't know what company you are using but you can try calling while you are en route to the resort to set up delivery. Once the bus leaves the airport it takes about 30 minutes to get to Disney. I was watching the time.
