Sorry, but I can't find this answered anywhere else...
We will be arriving at WDW on Jan 2nd, our first day in the parks will be Jan 3rd. Will the Christmas decorations still be up, and how long do they usually stay up?
I think you'll be able to see the decorations. We went in January 2005 and the decorations at the Wilderness Lodge didn't come down until the second week.

The reason you haven't seen a specific date is that there isn't one! I've been to WDW that very first week in January about 5 times (a couple of those times I arrived 1/1) and it really varies. One year, everything was still up that I saw when I checked out to come home 1/8. Another year, the decorations were up in Epcot 1/4, then down 1/5. One year, the tree was up in Epcot 1/2, but gone 1/4. As a CM I talked to explained it once, "It really depends on how busy we are doing things as to when we get "round tuit". But when something is removed, it's GONE! When they took down the tree and surrounding decorations at Epcot one year, I saw them one evening, then the next morning, not only were they gone, but Disney had replanted everything, so the area never looked "unfinished". That's what really amazed me.
