How hard is it to book a studio Thanksgiving Week?

Does a studio at Saratoga Springs or Animal Kingdom Jambo standard view typically need to be booked at 11 months for the week of Thanksgiving? I can't decide if I should borrow points in order to book 8 nights, or book 7 nights without borrowing and risk the 8th night not being available later on if we want it. The 8th night would be Black Friday if that makes a difference. Thank you! Booking window opens for our dates this Saturday, so I have to make a decision!

Maybe book all the nights but the first which might be easier to book at seven months out instead of the last night.
